Pear Tart

Ingredients
  • 1 sheet of Puffed Pastry
  • ⅓ cup almond paste
  • 4 pears
  • 4 oz. cream cheese
  • ¼ sugar
  • 1 egg
  • 1 teaspoon vanilla
  • a squeeze of lemon juice to keep pears from discoloring.
  • 1 tablespoon sugar
Instructions
  1. Mise en Place ~ Gather Ingredients.
  2. Preheat oven to 400°.
  3. Place the sheet of puff pastry on a piece of parchment.
  4. Score the puff pastry about three-quarter inch in - don’t cut through.
  5. Sprinkle the ground almonds within the scored dough – not to the edges.
  6. Cream together cream cheese, sugar, then add the egg and vanilla.
  7. Top puff pastry with mixture.
  8. Peel pears; slice thinly and squeeze lemon juice over them to avoid discoloring.
  9. Sprinkle a spoon of sugar over the pears.
  10. Place the pears onto cream cheese.
  11. Bake for 15 – 20 minutes.
  12. Cool on a cooling rack.
  13. Baste top of fruit with a clear jam.
Notes
I did not have any jam so with the remaining lemon juice and sugar, I added a little cornstarch. I microwaved for 15 seconds. I used it to brush the top of the pear tart.
