Add dry mixture in two batches – don’t overwork flour to avoid tough muffins.
Fold in banana chips and nuts
Use an ice cream scoop to fill muffin tin for even fill.
Bake 20 – 25 minutes or until toothpick comes out clean.
Notes
Sometimes I make up a “kit” with premeasured ingredients. I mix all the dry in a container (a jar), another container of chips, and nuts. I measure out the butter. Then all you need is the banana, an egg, vanilla, and buttermilk. It makes it all go together for a great weekend breakfast or a weekday if you can get up that early.
