Banana Nut Muffins Flavorful and Delicious
 
Ingredients
  • 1 cup = 5 oz. flour
  • ½ teaspoon baking soda
  • ¼ teaspoons salt
  • ⅓ cup = 2 ½ oz. sugar
  • 3 tablespoon butter, melted
  • 1 large egg
  • 1 large banana - very ripe
  • ½ teaspoon vanilla
  • 2 tablespoons buttermilk
  • ½ cup banana chips
  • ½ cup pecans or walnuts
Instructions
  1. Mise en place ~ Gather ingredients
  2. Heat oven to 350°
  3. Butter muffin tin
  4. Sift together dry ingredients; set aside
  5. Cream together egg, sugar, and butter.
  6. Add buttermilk
  7. Add dry mixture in two batches – don’t overwork flour to avoid tough muffins.
  8. Fold in banana chips and nuts
  9. Use an ice cream scoop to fill muffin tin for even fill.
  10. Bake 20 – 25 minutes or until toothpick comes out clean.
Notes
Sometimes I make up a “kit” with premeasured ingredients. I mix all the dry in a container (a jar), another container of chips, and nuts. I measure out the butter. Then all you need is the banana, an egg, vanilla, and buttermilk. It makes it all go together for a great weekend breakfast or a weekday if you can get up that early.
