Panko Crusted Fish

Ingredients
  • 1 cup tomato, seeded and chopped
  • 1 cup leeks, thinly sliced
  • ½ cup green bell pepper, chopped
  • 1 teaspoon garlic, minced (I used less)
  • Salt & Pepper to taste
  • 2 – 8 oz. Tripletail filets or any other flat fish such as Snapper, Flounder or Tilapia.
  • ½ cup Panko bread crumbs
  • ½ cup Parmesan, grated
  • ½ cup plain potato chips, crushed - (add ¼ cup extra panko and 1 Tablespoon of butter to replace potato chips.)
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne
  • 1 tablespoon of olive oil
  • 2 tablespoons butter, melted
  • 1 tablespoon green onions, thinly sliced
  • Lemon wedges
Instructions
  1. Preheat oven to 400°F. – or fire up the grill.
  2. In a small bowl, combine breadcrumbs, Parmesan cheese, potato chips, cayenne, and paprika. Stir in melted butter. Set aside.
  3. Add olive oil to iron skillet.
  4. Combined the tomato, leek, green bell pepper and garlic in a small bowl; season.
  5. Spread evenly around bottom of a cast iron skillet.
  6. Season filets; place on top of vegetables.
  7. Top filets with crumb mixture.
  8. Place skillet or pan, uncovered on hot grill grate and close grill, or in the oven.
  9. Allow filets to cook approximately 20 minutes or until they flake easily or register 140 degrees in the center.
  10. Transfer cooked fish on to a warm platter, surround with cooked vegetables.
  11. Garnish with tops of scallions; serve with lemon wedges.

I was having a few issues with this recipe. Well, not the recipe but who to attribute. I saw it on the The Church Cook , and she said she got it from Ray Martin, who owns a Marina and then I saw it on Sea Eagle Market site, all in the Savannah area. So I have tried to cover my bases, because this is such a delicious dish someone should be taking credit. I am just happy to be passing it on. Try it, you’ll thank me. You’re welcome.
