Peanut Cookies

Ingredients
  • 8 tablespoons (1 stick) softened butter
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • ½ teaspoon vanilla extract
  • 1 egg
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 cup shelled salted peanuts
  • 2 ounces semi-sweet chocolate, melted and cooled (optional)
Instructions
  1. Mise en place ~ Gather ingredients
  2. Preheat the oven to 350° F.
  3. Parchment for baking sheet.
  4. Cream the butter and sugars with an electric mixer until the mixture is light.
  5. Add the vanilla and egg. Beat well.
  6. Add the flour, baking powder – just to incorporate.
  7. Add in peanuts - Blend.
  8. Use your ice-cream scoop if you have one or
  9. Drop rounded tablespoons of batter, 2 inches apart, onto the baking sheet.
  10. Bake for about 10 minutes, or until the cookies are light brown – Mine took 14 minutes.
  11. Cool a few minutes on pan – then place on wire rack to finish cooling.
  12. Drizzle the melted chocolate over the cooled cookies.
  13. Store in cool, dry place.
Notes
*** I actually refrigerated the dough until the dough firmed up. Then I preheated the oven and baked accordingly. Use good butter please and good vanilla. This recipe does not call for salt since the peanuts are salty. I bought my peanuts at Trader Joe's - the 50% less salt. I thought they had just the correct amount. Salty and Sweet - just the perfect combination.
