Mini Blueberry Tarts

Ingredients
  • Mise en place ~ Gather ingredients
  • For the pie shell:
  • 1 package refrigerated piecrusts
  • 1 egg white – for brushing shells
  • For the filling – combine:
  • 1 ¾ cups fresh berries – divided
  • ⅓ cup sugar
  • 2 teaspoon cornstarch
  • 2 tablespoon orange liqueur or orange juice
  • ¼ teaspoon cinnamon
  • pinch of salt
  • yogurt or whipped cream – to garnish
Instructions
  1. Preheat oven to 450°F
  2. Lightly coat 4 muffin cups with butter or spray.
  3. For the shells – cut 4-6 inch circles
  4. Insert into muffin cup – crimp edges.
  5. Dock the dough (pierce dough with fork)
  6. Lightly brush with egg white
  7. Bake until golden brown – approximately 13-15 minutes
  8. For the filling:
  9. Combine 1 cup of berries, sugar, cornstarch, liqueur, cinnamon, and salt.
  10. Microwave 2 minutes; stir; microwave for another 2 minutes.
  11. Stir and allow to cool somewhat.
  12. Fold in remaining ¾ cup of berries into the mixture.
  13. Fill crusts with berry mixture and garnish with whipped cream or yogurt.
