Hot Milk Sponge Mini
 
Ingredients
  • 1 cup sifted all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons unsalted butter
  • ½ cup HOT milk
  • 2 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla
Instructions
  1. Mise en place ~ Gather ingredients.
  2. Sift together flour, baking powder, and salt; set aside
  3. Add butter to milk; keep hot. I warmed mine in the microwave.
  4. Beat eggs until thick and lemon colored, about 3 minutes at high speed on mixer.
  5. Gradually add sugar; beat constantly at a medium speed 4 to 5 minutes.
  6. Add in sifted dry ingredients to egg mixture; stir just until blended – don’t overmix.
  7. Stir in hot milk mixture and vanilla; incorporate, but don’t overmix or it will be tough.
  8. Pour into a parchment-lined 9-inch round or 8x8-inch square pan.
  9. Bake at 350° for 25-30 minutes – less if using a mini pan.
  10. Cool cake in pan for 15 minutes; remove to rack to finish cooling
