Chicken with Goat Cheese and Roasted Tomatoes

Ingredients
  • 2 chicken breast
  • goat cheese
  • a small pack of cherry tomatoes
  • 1 large shallot
  • 1 garlic clove – cut the root off, but leave the skin on to avoid burning.
  • 4 tablespoons olive oil - divided
  • a couple sprigs of thyme or about a ½ tablespoon of dry.
  • 1 tablespoon sugar
  • salt and pepper to taste
Instructions
  1. Halve cherry tomatoes
  2. Slice shallots
  3. Trim the end of a clove of garlic, but leave the skin on
  4. Add 2 tablespoon of olive oil
  5. Sprinkle with a tablespoon of sugar
  6. Salt and pepper
  7. Place in 375°F oven for 15-20 minutes.
  8. Bring chicken breast to room temperature; pat dry
  9. In a hot skillet add 2 tablespoon of olive oil.
  10. Sear chicken breast.
  11. Finish in oven. the chicken is done when temperature reaches 170°F.
  12. Remove from skillet and loosely cover with foil; rest so juices reabsorb.
  13. To the skillet add goat cheese; thin with a little milk or cream or stock.
  14. Turn off heat.
  15. Remove paper of garlic; just hold tip and smash out the clove – it will remove easily.
  16. Add in roasted tomatoes and shallots.
  17. Nap mixture over chicken.
  18. Enjoy.
