Rosemary Popovers

Ingredients
  • 2 eggs – beaten slightly
  • 1 cup flour – all purpose = 5 oz.
  • 1 cup milk = 8 oz.
  • 1 tablespoon butter – melted = 15 grams
  • ½ teaspoon salt
  • 1 teaspoon of fresh rosemary
  • shortening or oil for the prepping the pan
Instructions
  1. Mise en place ~ Gather ingredients
  2. Heat oven to 450°F
  3. Grease popover pan
  4. Beat eggs slightly.
  5. Blend remaining ingredient just to incorporate.
  6. Fill cups half full.
  7. Bake at 450°F for 20 minutes
  8. Lower the heat to 350°F; bake an additional 20 minutes
  9. Be sure not to open the oven door while baking – you will ruin the lift.
  10. Take a sharp knife; puncture a hole discreetly in the top allowing the steam to escape.
Notes
If you don’t have a popover pan you can use a muffin tin – the deeper the better.
