Four Minute Brownie Pie

Ingredients
  • 2 eggs
  • 1 cup sugar
  • ½ cup butter, softened
  • ½ cup flour
  • ¼ cup dutch process cocoa
  • ¼ tsp. salt
  • 1 tsp. vanilla
  • 1 Tbsp. Kahlua (optional)
  • ½ cup chopped and toasted walnuts, pecans or macadamia nuts (optional)
Instructions
  1. Mise en place ~ Gather Ingredients ~ Bring all to room temperature
  2. Preheat the oven to 350 degrees. Grease a 9 inch springform pan or 9 inch pie plate and set aside.
  3. Combine eggs through Kahlua (if using) in the bowl of a mixer. Mix for 4 minutes until batter is thoroughly combined; yes, you need to mix for a full 4 minutes!
  4. Stir in nuts if using.
  5. Pour batter into prepared pan and bake for 20 - 30 minutes until pie is set on top and doesn't jiggle when you move it - pie should look dry on top!
  6. Remove from the oven and let cool. As the pie cools it will fall - not to worry it is supposed to happen!
  7. Slice and serve!
Notes
So do yourself a favor and incorporate this into your next gathering. Serve with any berry, whipped cream, ice cream, a drizzle of chocolate or caramel syrup, or plain with a dusting of powdered sugar. I find it beautiful in its simplicity. I think this cake/pie/dessert has so many possibilities. It could be flavored with other flavorings, but it is so good I don’t know why you would.
