Refrigerator Salad

Ingredients
  • 1 fennel bulb
  • 1 red bell pepper
  • 1 yellow pepper
  • 1 onion
  • ½ cup orzo
  • salt and pepper
  • handful of grape tomatoes
  • handful of pine nuts - toasted
  • handful of salad greens
  • 4 tablespoon olive oil
  • 2 tablespoon red wine vinegar
Instructions
  1. Mise En Place _ Gather Ingredients
  2. Preheat oven to 375° F.
  3. Wash and slice vegetables in a bowl – save a few fronds for garnish.
  4. Toss with two tablespoons of olive oil.
  5. Place in a single layer on a sheet pan.
  6. Roast until tender – about 30 minutes.
  7. Toss with red wine vinegar while vegetables are still warm.
  8. While vegetables are roasting. bring water to boil; add salt; add orzo; cook for 7-9 minutes.
  9. Drain orzo; add 2 tablespoons olive oil; add to vegetables.
  10. Taste and adjust seasoning.
  11. Garnish with pine nuts and fennel fronds.
Notes
Be sure to toast the pine nuts for maximum flavor. Be sure to watch them because they can burn easily.
