Almond Chocolate Cookie

Ingredients
  • 2½ cups all purpose flour
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter, at room temperature
  • 1 cup packed brown sugar
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • scant teaspoon almond extract (teaspoon not quite full)
  • ¼ cup of mocha cocoa - the kind you use to make hot chocolate.
  • 1 cup almonds, slivered or chopped
Instructions
  1. Gather all ingredients - Bring to room temperature.
  2. Preheat oven to 350 degrees.
  3. In a medium bowl, whisk together flour, soda, and salt; set aside.
  4. Using an electric hand mixer or stand mixer, cream together the butter and sugars.
  5. Add eggs, once at a time, blending well after each addition. Blend in vanilla and almond extracts.
  6. Blend in flour mixture, a little at a time, until it’s all incorporated.
  7. By hand, stir in nuts just until incorporated.
  8. Drop by tablespoonfuls onto a parchment-lined baking sheet, spaced at least two inches apart.
  9. Bake in a preheated 350 degree oven for 10-13 minutes or until edges are starting to brown. Let cool on baking sheet for ten minutes then move to wire racks to cool completely.
  10. Yield: about four dozen cookies.
