Pecan Cookies
 
Ingredients
  • 1¼ cups all-purpose flour
  • ¾ teaspoons baking soda
  • ½ teaspoon salt
  • 7 tablespoon unsalted butter
  • ½ cup packed brown sugar
  • ⅓ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup of slivered almonds or pecans
  • ½ cup of raisins - optional
Instructions
  1. Preheat oven to 350 degrees.
  2. Prepare cookies sheet with parchment.
  3. In a small bowl whisk flour, soda, and salt; set aside.
  4. In a medium bowl cream together the butter and sugars.
  5. Add egg, vanilla and extract.
  6. Add flour mixture, a little at a time, just to incorporate.
  7. Stir in dried fruit and nuts.
  8. Drop ice cream scoop of dough onto a parchment-lined baking sheet, spaced at least two inches apart.
  9. Bake in a preheated 350 degree oven for 10-13 minutes or until edges are starting to brown.
  10. Allow to cool on baking sheet for ten minutes; then move to wire racks to cool completely.
