I have been waiting for apple season to make this new to me Apple Cream Tart by Laura Calder. I don’t know if you are aware of her, but she is the French equivalent of the Barefoot Contessa. Well actually she is from Canada, but has spent much of her time in France. She is so charming and she admits to being a bit quirky. That may be why I like her so much. You can find her on thecookingchannel or on youtube. Her food is Country French much like Ina’s. I love the ease of that style of cooking. It does not become a three-day project. It is sophisticated, but it is not fussy. I find it amusing that she has an aversion to complicated gadgets. She will just whip it up with a whisk – voila, she is done. I like gadgets, but I want them to earn the real estate they are taking up.
For those of you that do not know it yet, the bar code sticker should start with the number 9 plus 4 more digits if your apples are organic. If you can’t find organic, wash the apples in a vinegar solution and peel them before you make your tart. I used Granny Smith because they were organic. Eric said there will be others soon, but for now it was the grannies.
Before you go to the market next week check your pantry. I think you will have everything but the apples and cream cheese and maybe your almonds or walnuts. Look a little closer in the freezer. I bet there are nuts in there somewhere. You only need a quarter cup – that would be four tablespoons. The nuts would be your choice. She said the original called for walnuts, but she prefers almonds. I think walnuts go better with apples and almonds go with cherries, apricots, and peaches. I think I am correct since she said walnuts were in the original – there is a reason for that, but again – your choice.
The crust was different from any I have made before. I always preach say when making cakes everything should be at room temperature and pies and tarts everything should be cold. Well, this goes against the rules, the butter and sugar are creamed and then the flour is added in. You mix gently so not to toughen the dough and then gently press into the tart pan.
Ina says to take ten items and make it three ways. You then have thirty dishes in your repertoire. I have a few more to go, but my apple cake was pretty awesome, so I will have to find another apple dish and I will have apples covered. Don’t let my photography turn you off – the apple cake is delicious, and so is this Apple Cream Tart.
When starting a dinner you should start with dessert first, while it is cooling slip the cod with tomatoes and tapenade in the oven, or a good pasta dish. You have dinner and dessert. Buy some good bread and set the table. I think this should go in the “Company is Coming” file. Looks like I need a tart pan.

- Tart Shell
- ½cup Butter
- ⅓cup Sugar
- ½tspn Vanilla
- 1 cup Flour
- Cream Filling
- 1 egg
- ½ tsp Vanilla
- 8 ounces Softened Cream Cheese
- ¼ cup Sugar
- Topping
- 3 Apples (peeled and thinly sliced)
- ¼ cup Sugar
- ½ tsp Cinnamon
- ¼ cup Slivered Almonds or Chopped Walnuts
- Lemon juice
- Mise En Place ~ Gather Ingredients
- Tart Shell
- Preheat the oven to 400°F/200°C.
- Make the crust, cream the butter and sugar.
- Stir in the vanilla.
- Gently mix in the flour.
- Press into the bottom of an 8-inch/20-cm spring-form pan, giving it about an inch/2.5cm rim.
- Bake for about 15minutes until golden.
- Remove from the oven.
- Cream Filling
- Beat all the ingredients for the cream filling together until smooth.
- Make the topping by tossing the apple slices with the cinnamon, sugar and nuts.
- Remove the tart shell from the oven. Spread over the cream mixture.
- Topping
- Arrange the apple slices on top, then scatter over the nuts.
- Bake until apples are tender and golden about 40minutes.

Good Morning Ms Lemon, This is a lovely recipe. Baking is such a fascinating subject, as you think you know the rules, and then the rules are broken, such as they are with this pastry. I love pastry which is pressed into a pie dish as it always has such a lovely crumbly texture and the pie has a lovely rustic feel to it.
I love cooking and baking so I will certainly be trying your Apple Cream Tart, it really looks lovely and I like the addition of the walnuts.
It is always fun trying a new recipe.

Ah yes, Laura Calder, my fellow Canadian who studied the culinary arts in France, loved it so much, that she adopted everything French to fit her lifestyle! She is a talented and laid back hostess, who makes things look very simple and I LOVE her TV kitchen! Your Apple Cream Tart looks divine! I will definitely give it a go, as it is not too tricky! I especially love the fact that it has a cream filling, unlike the common apple pie.
