I seem to always be a little late to the party; I mean I did not know there was a party, but, as they say, better late than never. Seems everyone is aware of Buttermilk Pineapple Sherbet judging by the tons of the popular recipes in various forms on the Internet, some using canned pineapple and some using fresh. I vote for fresh, but if you cannot get your hands on fresh, well, I’ll turn my head, act like I don’t notice, and try not to judge.
In my younger days I would not have come within a hundred yards of this recipe. I mean who would purposely eat buttermilk? Worse yet as an ice cream for goodness sake. As I have become as the French so politely say, “a woman of a certain age” I have changed. (Not to get off track, but I am still steaming over a CNN reporter speaking about the lady they pulled out of the collapsed building as “an elderly woman of 61”. The French are definitely more polite when referring to a lady as a woman of a certain age. I have stopped watching CNN.), but I digress. I am smarter now and my taste buds have developed; as I like to think matured. I started thinking if you would eat yogurt you would eat buttermilk. And if you would not eat pineapple, well there probably is a diagnosis for that, but I don’t have a medical license so I am not allowed to practice medicine.
However, if you are looking for a quick, convenient, easy dessert this is your baby. I don’t know how to make it easier for you unless you buy a carton. But if you buy that carton, I’ll ask you to think about that carton in the summer heat that has been on the dock, then in the truck, then back on a dock, then in the back storeroom of the store, then in their freezer and looks a little melty around the opening, think of me, and how I could have saved you. Then after all that if you choose to buy that carton please read the ingredient label and let me know how many words you cannot pronounce. I’m just saying…..

Thank you Claire Robinson for a refreshing dessert. Thank you Trader Joe’s for cutting up my pineapple for me. Shame on you CNN for referring to a mature woman as elderly; she is not even old enough to retire. Would you call Meryl Streep elderly? How about Ina Garten? You should show a little more respect.
- ½ fresh pineapple, peeled and diced (about 1 cup)
- ¾ cup sugar
- 2 tablespoons water or pineapple juice
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 quart lowfat buttermilk
- pinch of salt
- Mise en place ~ Gather ingredients
- In a small heavy bottomed saucepan over medium heat, add the sugar, water or pineapple juice, lemon juice and zest.
- Stir just until sugar melts; let cool.
- Transfer pineapple mixture to a food processor.
- Add 1 cup buttermilk; puree until smooth.
- With the motor running, slowly add remaining buttermilk just to blend - don't overfill.
- Taste to see if it is sweet enough – adjust as needed.
- Pour into a freezer-safe dish; place in the freezer.
- Freeze until firm, at least 2 hours.

I carried this around in my head for a while until I got brave enough to make it, but I have to tell you it is delish and refreshing. Save a little buttermilk for the biscuits, because there is nothing on earth better than a buttermilk biscuit. Check out my parmesan scones – aka biscuits – people fight over them. The recipe rattled around in my head for a long time, then I finally made it. If you can get your hands on Cruze brand buttermilk, people tell me you will be converted.
